Nyama Choma & Ugali
The undisputed kings of Kenyan cuisine. Nyama Choma translates to "roasted meat" (usually goat or beef) and is a weekend social ritual. It is slow-roasted over charcoal and served with Ugali, a dense, neutral-tasting maize flour porridge that acts as an edible utensil to scoop up stews and meats. It is almost always accompanied by Kachumbari, a fresh, tangy salad of diced tomatoes, onions, and chili.
